Cod Bathed in Tomatoes



I have been craving tomato sauce lately.  I want to eat everything in tomatoes.  Maybe I have been watching too much David Rocco lately.  Supper tonight had to be fish and tomato sauce. 

Here is a David Rocco inspired, healthy and simple recipe for cod in tomato sauce (I need to think of a sexier name.)

COD BATHED IN TOMATOES (How's that? Lame huh? It tastes good despite my horrible naming abilities)

INGREDIENTS:
1 or 2 lbs cod or other white fish (it needs to be a sturdy fish that
won't fall apart)

Flour

Olive oil

2 cloves garlic, minced

Red pepper flakes to taste

Oregano (I used ground but fresh would work) (I am guessing about 1/4 a tbsp but I just shook some in and hoped for the best)

Can or jar of chunky tomato sauce

Salt to taste

2 shakes of red wine vinegar

Parsley

INSTRUCTIONS:
Dredge cod in flour.  Saute in olive oil until brown.  Drain on paper towels.

NOTE:  If you are trying to avoid frying like me just put the cod in the sauce (without flour) to cook and skip the frying step.  That's what I did and it was still good. I didn't miss the fryedness of it; plus you then only dirty up one saucepan and that is always better in my book.

In another saucepan, heat olive oil, add garlic, and red pepper flakes. Saute a couple of minutes. Don't burn the garlic or it will be bitter.

Add tomato sauce.  Add as much as you think you will need to cover the fish  (in other words put in as much as you think you will want to eat).

Single Girl Trick:  You can pour the rest into an
ice cube tray, place in freezer, once frozen put in Ziploc freezer bag in freezer and use next time.

Add salt, oregano, and 2 splashes of red wine vinegar. Cook about 10 minutes or if you did not fry the fish, cook until the fish is done.  Add parsley and eat.

NOTE:  I used to skip the parsley because I am lazy and how much could that little bit of parsley add anyway.  It turns out parsley is really good for you.  It is high in Vitamin C and if you don't already know, Vitamin C helps to ward off wrinkles (among other things) so eat up the parsley girls!  It also is high in Vitamin A and some say it can help with high blood pressure.  Turns out I should have been eating my parsley after all.
